Mini did a 2 month project in Mazunte, Mexico to setup a holistic ayurvedic centre "Annapurna" including a health restaurant and a yoga & meditation centre. 

 

During this project she developed a low calorie menu for the restaurant based on the Ayurveda clock - vata, pitta and kapha. She also created recepies and trained the kitchen staff for the same.
